With a rainbow of pesticide-free fruit, Seneca Lake-based Four Chimneys Organic Winery makes wines ranging from dessert sweet to bone dry. Various sustainable-farming measures mark the path from vine to glass, including the winery’s practice of releasing ladybugs and lacewings in the vineyards to keep grape-hungry pests in check.
Dry wines in the lineup include Cabernet Franc, Vidal Blanc and Kingdom White, a nod to Pinot Grigio. The sweet options couple grapes and fruit, such as white Aurore hybrid grapes with Bartlett pears.
Summertime visitors sample the lineup in a restored 1860 dairy barn cooled by lakeside breezes. Tastings shift to a second weatherproofed barn on the property in the winter.
